SD ultra/Extreme VS Standard SD cards

Ive been wondering about this for a while, do the much more expensive class 10 sd ultra/extreme make much difference to the quality of video at hd 720 or 1080 or High quality pictures compared to 'normal' Class 2 SD cards when you have put them on your computer? Is there any noticable difference apart from the time it takes to actually transfer them from the card to the computer?

There is no difference at all in the picture quality. It's exactly the same. The only differences are that the expensive ones are supposedly more robust, long-lived and (as you say) have a higher transfer speed. I use the cheaper ones in my Sony EX3 with an adapter and I've never had a problem.

Indeed. They're even more expensive where I live (actually quite a lot more), which is why I avoid them.
